A luscious and less fattening alternative to conventional cream cheese cake
INGREDIENTS 1 1/2 cups crumbs of graham crackers, crushed fine 1/4 cup confectioner's sugar 6 tablespoons butter 1-1/3 cups sugar 1/3 cup milk 2 lbs. fresh Capri Goat Cheese, warmed to room temperature 4 beaten egg yolks 3 tablespoons flour 1 teaspoon vanilla 4 egg whites whipped until stiff
GRAHAM CRACKER CRUST Preheat oven to 325°F. Crush or grind 1 1/2 cups of graham crackers until very fine. Stir in 1/4 cup confectioners' sugar and 6 tablespoons of melted butter until well blended. Reserve 1/3 of the crust for a topping. Pat the rest into the pan to the desired thickness. Bake at 325° for 15 minutes.
CHEESE FILLING Dissolve the 1 1/3 cup sugar in the 1/3 cup milk. Add the fresh Capri goat cheese, egg yolks, flour, and vanilla. Fold the beaten egg whites into the cheese mixture. Fill the shell and sprinkle the remaining crumbs over the top. Bake in a 350° degree oven for 1 hour. Do not overbake; the cheese cake will firm up when cooled.
